If you are at all like me, you are constantly trying to find healthy alternatives for you children that doesn't cost an arm and a leg (I am Dutch, so even just the saving money part is good enough for me). The other day on Facebook a friend gave me a recipe for Homemade Doughnut Holes (your mouths may begin watering at any time now). My children love doughnuts and doughnut holes, but they are always expensive or go stale before we get to them all...so why not make them homemade? The best part of this recipe is that the holes are actually baked in the oven instead of fried (somewhat healthy points there...as healthy as doughnut holes can actually be).
The recipe is actually very simple and I had everything at home to make them already (except the mini muffin tins, but that was solved by having one AWESOME neighbor and best friend):
2 tablespoons vegetable oil or melted butter
1/2 cup sugar
1 egg
1 teaspoon vanilla
2/3 cup milk
2 cups all purpose flour (Jen had a whole bag of flour this time...LOL!)
1 tablespoon baking powder
1/4 teaspoon salt
For topping:
3-4 tablespoons butter, melted
1/2 cup sugar
2 teaspoons cinnamon
Preheat oven to 350. Mix oil and sugar; beat in egg. Add vanilla and milk, and stir until combined.
Mix flour, baking powder, and salt together. Add to wet ingredients and stir gently, just until combined. (a few lumps should remain).
Fill mini muffin tins 2/3 full with batter. Bake for 10-12 minutes.
Combine sugar and cinnamon. Dip each muffin/doughnut into the melted butter and then roll in the cinnamon sugar.
I am also going to try them in powdered sugar and see how that goes...(*editors note, not as great as the cinnamon and sugar ones, but the boys still liked them).
They are currently baking in my oven, and I am starting to smell them (yum-o), hopefully they will be a welcome treat for the family (what am I saying? I have three boys in this house, of course they will be welcome!). If you try the recipe let me know how it works out for you :)
